SUPER SIMPLE Cashew Cheese!
Ingredients (yields about 1.5-2 cups)
- I cup of cashews soaked overnight
- 1/4 cup water
- Fresh juice of 1 lemon
- 1 crushed clove of garlic
- 1/4 tsp garlic salt
- 1/4 tsp sea salt
- 1/4 fresh ground pepper
- 1 tsp apple cider vinegar
- 1/4 tsp dried rosemary or a fresh sprig
- Optional: 2 tbsp nutritional yeast (which I don’t have in my house)
Steps:
- Soak 1 cup of cashews in water overnight
- Drain & rinse the cashews
- Throw all ingredients into a blender or food processor
- Let sit in the fridge to firm up
- Voila!
Perfect to eat with crackers or to spread on sandwiches. This was seriously the easiest thing ever & it turned out to be so tasty!
