SUPER SIMPLE Cashew Cheese!


Recently, Sprouts had a sale on their bulk cashews. They ended up being almost half of their original price, so I ended up buying 2 pounds of them. I figured it was the perfect opportunity to try to find recipes I like for cashew milk & cheese. I ended up finding a couple & tweaking them to make my own. This was super simple & besides soaking the cashews overnight, took barely any time.

Ingredients (yields about 1.5-2 cups)

  • I cup of cashews soaked overnight
  • 1/4 cup water
  • Fresh juice of 1 lemon
  • 1 crushed clove of garlic
  • 1/4 tsp garlic salt 
  • 1/4 tsp sea salt
  • 1/4 fresh ground pepper
  • 1 tsp apple cider vinegar
  • 1/4 tsp dried rosemary or a fresh sprig
  • Optional: 2 tbsp nutritional yeast (which I don’t have in my house)

Steps:

  1. Soak 1 cup of cashews in water overnight
  2. Drain & rinse the cashews
  3. Throw all ingredients into a blender or food processor
  4. Let sit in the fridge to firm up
  5. Voila!
Perfect to eat with crackers or to spread on sandwiches. This was seriously the easiest thing ever & it turned out to be so tasty!
